Apples & Honey

 

It doesn’t seem to matter if Rosh Hashanah is “early” or “late”, whether Religious School is already in session, whether Labor Day has come and gone – every year it’s the same tired phrase “I can’t believe it’s Rosh Hashanah already; where did the summer go?”! You would think after 5775 years we would get that the holiday is coming!

In honor or Rosh Hashanah, some new ideas for celebrating with Apples and Honey:

1. Slice and toast a bagel or ciabatta roll. Spread with honey mustard, sliced green apples, sharp cheddar cheese and drizzle with honey.

2. Stir together 1 cup each of honey and heavy cream, add a pinch of salt and bring to a simmer (you can add a little vanilla here too if you’d like). Put some cold, small apples on a stick or bamboo skewer and swirl. Chill in the fridge on waxed paper.

3. Equal parts vanilla Greek yogurt, peanut butter and 1/2 part honey stirred together makes an awesome (and healthy) dip for apple wedges.

4. Try an arugala or baby spinach salad topped with chopped apples, spiced pecans and sliced chicken (a great way to use leftovers!). Whisk together 1 tbsp of olive oil, 2 tsp of lemon juice and 1 tsp of honey for the dressing.

5. Make small pizzas with fig wedges, thinly sliced apples and crumbled gorgonzola. Heat at 375 degrees until the cheese is melty, then drizzle with honey and a sprinkle of parmesan.

6. Design your own apple nachos! Core and slice apples, lay flat on a plate and begin layering and stacking with your favorite toppings; such as chocolate syrup, carmel drizzle, chopped nuts, marshmallows, chocolate or peanut butter chips, coconut, etc. Drizzle with honey and a sprinkle of sea salt.
